But it\u2019s important to realise that everyday behaviour has a global impact, and as you\u2019ll soon see, that morning yoghurt is not quite as innocent as it seems.<\/p>\n<p><iframe title=\"Cow-free milk by Perfect Day - disrupting the dairy industry with a holistic approach\" width=\"800\" height=\"450\" src=\"https:\/\/www.youtube.com\/embed\/r72DBTe49Hk?feature=oembed\" frameborder=\"0\" allow=\"accelerometer; autoplay; clipboard-write; encrypted-media; gyroscope; picture-in-picture\" allowfullscreen><\/iframe><\/p>\n<p>Because of their size and energy requirements, cows use a lot of resources, about 50 per cent more than a pig. That\u2019s a lot of water and land, much of which is further compromised by their waste, or the fertiliser necessary to keep pastures green and corn rich enough to provide high-quality feed. And cows release a lot of methane, a greenhouse gas that has a far greater impact, gram for gram, than CO2 on global temperatures. In fact, livestock accounts for 14 per cent of global greenhouse emissions, a far higher number than you might imagine. Worse still, the ethics of dairy farming are a sore spot. Milk production isn\u2019t magic: it demands constantly pregnant cows. They\u2019re inseminated as often as necessary, and their offspring are mercilessly sorted. Males are sold for veal; females enter the milk cycle. These issues may make you take a second look at your ice cream, and it\u2019s a little harder to enjoy when you count its actual costs.<\/p>\n<p>And as people become more aware of those, they\u2019re demanding change. Whether worried about the environmental impact or the ethics of commercial dairy, many are reaching for a better option in grocery stores. In fact, the success of plant-based \u2018milk\u2019 made from soy, almonds, or rice, now displacing about 10 per cent of dairy sales, suggests there\u2019s a consumer demand for alternatives. But cutting-edge biotech may soon enable guilt-free dairy that\u2019s safe for the environment.<\/p>\n<h2>Perfect Day: gene sequencing starts the process of \u2018brewing\u2019 dairy<\/h2>\n<p>Perfect Day, a startup driven by the inventive genius of Ryan Pandya and Perumal Gandhi, wants to use <a href=\"https:\/\/blog.richardvanhooijdonk.com\/en\/keynote\/the-future-of-agriculture\/\">high-tech gene<\/a> sequencing to produce dairy proteins in a revolutionary new process. Pandya and Gandhi start by taking DNA from a cow and sharing its protein-producing qualities with ordinary food-grade yeast. The result is a new strain of the basic microbe behind bread and beer, but with a milky twist: when fed the right nutrients, it can now produce whey and casein, the building blocks of dairy-like milk, yoghurt, and cheese. \u201cWe\u2019re taking plant nutrients and transforming them into animals [sic] proteins the same way that cows do, using the same milk proteins as found in cow\u2019s milk, but much more efficiently, because we\u2019re using a yeast cell not a 2,000lb animal,\u201d Pandya <a href=\"https:\/\/www.theguardian.com\/environment\/2016\/sep\/13\/animal-free-dairy-products-move-a-step-closer-to-market\">told<\/a> <em>the Guardian<\/em>.<\/p>\n<figure id=\"attachment_32214\" aria-describedby=\"caption-attachment-32214\" style=\"width: 800px\" class=\"wp-caption aligncenter\"><img fetchpriority=\"high\" decoding=\"async\" class=\"wp-image-32214 size-full\" src=\"https:\/\/blog.richardvanhooijdonk.com\/wp-content\/uploads\/sites\/4\/2019\/05\/Perfect-day-1024x640.jpg\" alt=\"A glass bottle of animal-free milk on a light green background\" width=\"800\" height=\"501\" \/><figcaption id=\"caption-attachment-32214\" class=\"wp-caption-text\">Perfect Day, a startup driven by the inventive genius of Ryan Pandya and Perumal Gandhi, wants to use high-tech gene sequencing to produce dairy proteins in a revolutionary new process.<\/figcaption><\/figure>\n<p>If that doesn\u2019t sound revolutionary, consider that these proteins come without the hormones, steroids, or antibiotics of modern dairy. What\u2019s more, this process is environmentally friendly. For instance, <a href=\"https:\/\/www.forbes.com\/sites\/michaelpellmanrowland\/2018\/02\/27\/perfectday-disrupts-dairy\/#3bdb00605f61\">according<\/a> to <em>Forbes<\/em>, brewed milk produces\u00a084\u00a0 per cent less greenhouse gases, and requires 98 per cent less water, 91 per cent less land, and 65 per cent less energy than regular milk. Best yet, this isn\u2019t \u2018Franken-milk\u2019 &#8211; it\u2019s the real thing, chemically identical to the animal-produced equivalents, but without the environmental damage and cruelty. People who\u2019ve tasted it swear that it\u2019s just like what you\u2019re used to.<\/p>\n<h2>A cheese lover\u2019s dream come true?<\/h2>\n<p>Pandya and Gandhi know that the love of cheese runs deep &#8211; they feel it too! And like pretty much everyone who\u2019s tried them, they came away unimpressed with plant-based substitutes. As Pandya <a href=\"https:\/\/www.theguardian.com\/environment\/2016\/sep\/13\/animal-free-dairy-products-move-a-step-closer-to-market\">says<\/a>, \u201cThe alternatives for yoghurt, cheese and ice-cream are so bad that people don\u2019t even want to try them \u2026 Many have been switching to more plant-based diets but when you have to give up cheese you think \u2018oh my god my life sucks I love pizza\u2019. If you try to make cheese out of pea milk you will be sorely disappointed.\u201d With Perfect Day\u2019s dairy proteins, companies can still make cheese, yoghurt, and ice cream the old-fashioned way, but it\u2019ll be better for us, better for the planet, and better for the cows, too. Pandya and Gandhi are savvy businessmen, and they recognised that producing a consumer-ready product like milk or cheese is a huge undertaking. Instead, they\u2019ve set their sights on the long-term, and their plan is to provide the raw ingredients for better-established food companies. This B2B model is a safer place to start. As Gandhi <a href=\"https:\/\/thespoon.tech\/how-now-no-cow-animal-free-dairy-startup-perfectday-raises-24-7m\/\">explains<\/a>, \u201cNobody else was working on the supply chain side \u2026 We started this company to have the largest possible impact on the effects of animal agriculture on our planet, and now we can do that by working with grocery stores across multiple channels. We can be national from Day One.\u201d<\/p>\n<p>The idea, then, isn\u2019t for Perfect Day to begin by producing a line of milk or cheese. Instead, they\u2019ll work with the established players, supplying the raw ingredients for their already popular products. As Chase Purdy <a href=\"https:\/\/qz.com\/1214711\/watch-out-cows-yeast-is-the-gunning-to-be-the-next-dairy-disruptor\/\">reports<\/a> for <em>Quartz<\/em>, \u201cThese ingredients, such as lactose, casein, and whey, [will be] sold to food manufacturers who use them in countless products across the modern grocery store.
